Striking the balance between what needs to change and what should remain untouched has been key to maintaining the success of the Fishermans Rest.

With over 21 years experience of successfully running a number of pubs it would be easy for joint managers Pete and Pat Karkovskis to use the benefit of that experience to personalise the Lymington pub they took over six months ago.

But such was the success of the pub-restaurant the couple inherited only one element of the pub has continued to be regularly refreshed - their food menus.

It is hoped that doing so will keep the customers coming back for more of their locally sourced, impeccably presented and tasty home-cooked food.

Head chef Nigel Parsons, 43, said: "If you can change things around people don't know what they will get when they come here."

Pat, 53, said: "The pub had a very good reputation before so we are just carrying that on."

As examples, some of the lunch menus change daily, while the once monthly cruise night destination - when the entertainment and food are inspired by an exotic location from across the world - is different every month.

Making sure the food is spot-on is of huge importance to the pub-restaurant - for example a new kitchen has been recently installed.

"The reason this place is special is because of the food," 57-year-old Pete said. "It is particularly well known for its fish."

Being new to the pub the couple are grateful to have the knowledge of their experienced team of staff - led by assistant manager Sharon Tester - to help them develop a feel for the area and its customers.

Situated on the doorstep of Lymington Marina sailing crews are amongst the regulars as are a "more mature clientelle".

"It is very relaxed here and the customers tend to be a bit more sensible," Pete said.

And having travelled around England running pubs for over 20 years Pete and Pat feel they have finally found a place to settle.

"This is going to be the last place for us for retirement," a contented Pete smiled.
